In Fujian Province, one of the most unusual tea specialties in our world is still produced largely by hand, both in terms of production and character. Immediately after withering, the still-damp tea leaves are briefly heated with steam from milk, preserving the beautiful light olive-green leaf and cup color and creating the distinctive creamy aroma and flavor. The leaves are then rolled and dried by hand. This is an extremely sweet tea that is sure to quickly win over many new fans.
