For this, the youngest shoots are not used, but rather the souchong leaves: mature, larger leaves from the lower regions of the tea bushes. After fermentation, these leaves are placed in hot iron pans and briefly roasted, then the tea is smoked over resin-rich pinewood. The smoking time depends on the variety (Lapsang Souchong, Tarry Lapsang Souchong, Lapsang Souchong Crocodile). Our Lapsang Souchong has a smoky, spicy flavor; the leaves are blackish-grey, with a sharp smoky note.
